Learning to Cook While COVID Rages

I have stopped counting how long we have been in all sorts of lockdown since COVID-19 demanded a new kind of normal.
My housemate Rosh is staying with her family since Luzon's community quarantine has been implemented in March, so I have been alone, stuck at the condo, and working from home like 98% of the time since then.
To pass the boredom, I tried my hand at cooking things that I haven't tried cooking before. Pre-COVID, I usually just cooked something quick and easy and with little to no room for mistake. I mean I was the only who's gonna eat it, so why bother with complicated recipes or those that need several ingredients?
Of course, that mindset changed after several weeks of eating the same things over and over again and ordering online for food seemed risky (thank god food deliveries are kinda back to normal now).
I remember wanting to eat this vegetable stew with coconut milk that I always bought from a nearby carenderia back when I was still living in Cebu. We call it "tinunuan" or "ginataang gulay".
Ever since I moved to BGC, I have not had any legit lutong-bahay dishes that I could usually buy cheap in carenderias. I miss that, and so without thinking twice about, I set out to buy the ingredients and decided to cook "ginataang gulay" myself. It turned out really good and that jumpstarted my COVID cooking journey.
The catch? I live alone, which means I have to finish everything myself, and that's when meal prepping without all the fancy shit came into the picture. So without further ado, here's my cooking journey so far:
